Zibo – Passito di Zibibbo

    Our dessert wine, Passito di Zibibbo, undergoes the extensive and laborious appassimento process. The grapes are harvested manually during the first 10 days of August. Once harvested, they are carefully placed on wooden racks where they can be observed as they dry in the sun until the beginning of September. The result is a lusciously sweet and concentrated wine that makes for a luxurious treat.
