Madre Manzoni Bianco

    Madre is the natural evolution of thought which draws value from our history, from our experiences and also from our mistakes. It is what we take most pride in. Made purely from Manzoni Bianco grapes, Madre comes to you organically grown and unfiltered. Excellent as an aperitif, Madre is delightful when paired with fish dishes. It also goes very well with white meats, cured meats and cheeses. Enjoy it in between meals as well.

    Vinification:

    Grapes are hand harvested during the first 10 days of September. The grapes are then manually loaded to undergo a long and gentle pressing. Then fermentation takes place in concrete and later in wood. The wine remains with its own yeast until March. It then ages in the bottle for a least one year.
